Ingredients:
1 1/2 cups all-purpose flour
1/4 cup oat bran
1/2 cup sugar
1/2 tsp. salt
2 tsp. baking powder
1/2 cup unflavored soy milk
1 egg
2 Tbsp. oil
2 tsp. lemon juice
3 ripe bananas, mashed
1 1/2 cups blueberries (fresh or frozen)
Preheat oven to 400°F. Combine dry ingredients in a medium bowl and whisk to blend.
Place mashed bananas in large mixing bowl. Whisk or stir in soy milk, egg, oil and lemon juice. Mix in the dry ingredients until just mixed. Add blueberries.
Fill lined 12-cup muffin tin with batter. Bake approximately 20 minutes. Cool on cake rack at least 10 minutes. Serve warm or at room temperature. Cool completely before freezing.
