Honey cake is a tried and true Rosh Hashana tradition. But how many of us actually enjoy our cake? Here’s a recipe from Mrs. Horowitz, an Oorah employee who actually enjoys baking (and does it well!), that will make you look forward to your Rosh Hashana honey cake. With the added kick of whiskey and ginger, it’s moist and delicious.
Ingredients:
3 eggs
1 cup honey
1 cup sugar
1 tsp. coffee dissolved in 1 cup warm water
1/2 cup oil
2 tsp. baking powder
2 tsp. baking soda
2 tsp. vanilla
2 3/4 cup flour
1/2 tsp. allspice or 1 tsp. cinnamon
1 tsp. ginger
1 tsp. ground cloves
2 tsp. whiskey
Beat eggs and honey. Add sugar and mix. Mix in oil and baking powder. Mix baking soda with warm coffee and add to batter. Mix in the rest of the ingredients.
Bake at 350 F for 45 minutes or until top springs back. Enjoy and have a sweet new year!
