One of the simanim (symbolic foods) we eat on Rosh Hashana is a head– most commonly, a fish or sheep head– along which we recite a prayer “…she’ni’hiyeh l’rosh v’lo l’zanav” – “…that we be as the head and not as the tail.”
- Some people have the custom to eat beef tongue for this siman. Sweet and sour tongue is a special delicacy perfect for Rosh Hashana.
Ingredients:
One beef tongue
3 Tbsp. flour
3 Tbsp. oil
2 cups hot (not boiling) water or tongue broth
¾ c. brown sugar
½ Tbsp. lemon juice
¼ cup white raisins (optional)
drop of ketchup
Boil tongue for an hour. Spill off water and add fresh water. Boil at least 2.5 hours, until tender. Allow to cool and slice.
Brown flour and oil. Add hot water or tongue broth. Add slowly and stir while adding, till a thickish sauce forms. Add brown sugar, lemon juice, a drop of ketchup, and raisins, if desired.
Put sliced tongue in and simmer in the sauce.
