Honey cake is a tried and true Rosh Hashana tradition. But how many of us actually enjoy our cake? Here’s a recipe from Mrs. Horowitz, an Oorah employee who actually enjoys baking (and does it well!), that will make you look forward to your Rosh Hashana honey cake. With the added kick of whiskey and ginger, it’s moist and delicious.

Ingredients

  • 3 eggs
  • 1 cup honey
  • 1 cup sugar
  • 1/2 cup oil
  • 2 tsp. baking powder
  • 1 tsp. coffee dissolved in 1 cup warm water
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 2 3/4 cups flour
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. ground cloves
  • 2 tsp. whiskey

Beat eggs and honey. Add sugar and mix. Mix in oil and baking powder. Mix baking soda with warm coffee and add to batter. Mix in the rest of the ingredients.

Pour batter into 3 7-inch round pans. (Don’t try this in a 9×13 – the middle will sink.) Bake at 325°F for 1 hour, or until top springs back. Enjoy and have a sweet new year!
