This classy cake comes out moist and light and is a cinch to prepare.

Ingredients:

2 cups flour

2 cups sugar

1 (2.8 oz) package instant vanilla pudding mix

2 tsp. baking powder

4 eggs

3/4 cup orange juice

2/3 cup oil

1/4 cup vodka

1/4 cup almond liqueur

Almond Glaze:

1 cup confectioners sugar

1 tsp. almond extract or liqueur

1-2 Tbsp. water

2 Tbsp. toasted sliced almonds

Preheat oven to 350F. In a large mixing bowl, combine flour, sugar, pudding mix and baking powder. Slowly add eggs, orange juice, oil, vodka and almond liqueur. Mix well. Pour batter into a greased bundt pan. Bake for 1 hour. Remove from oven and cool.

In a small bowl, combine first two glaze ingredients. Add water until the glaze is of a consistency to be drizzled. Glaze cake. Sprinkle on almonds before glaze hardens.
