Ingredients:

White Mixture

  • 2 eggs
  • 2 potatoes, cooked and mashed
  • 1 small onion, sautéed in oil

Brown Mixture

  • 1/2 pound ground beef or dark turkey
  • 1 egg
  • 1 potato, cooked and mashed
  • 1 small onion, sautéed in oil
  • 1/4 tsp salt

Instructions:

  1. Combine all ingredients for white mixture.
  2. Spread onto greased foil or parchment paper, in a circular shape, half an inch thick.
  3. Brush top of chicken with oil.
  4. Combine all ingredients for dark mixture.
  5. Spread onto greased foil or parchment paper, in a circular shape, about 1/4 inch thick.
  6. Brush top of meat with oil.
  7. Invert brown meat mixture directly over white meat mixture and roll up, leaving paper behind.
  8. Re-wrap well in foil and twist edges.  Place meat loaf in pan of salted water.
  9. Cook on the stove or bake, covered, at 350 degrees Fahrenheit for one and a half hours.
